Ingredients

For the cranberry topping
  • 1 cup fresh cranberries
  • 0.33 cup granulated sugar
  • 2 tbsp water
  • 1 tsp orange zest finely grated
  • 1 tbsp orange juice
For the brie
  • 1 wheel (8 oz) Brie cheese
For serving
  • 1 box (8 oz) buttery crackers

Equipment

  • 1 rimmed baking sheet

Method

Make the cranberry topping
  1. Preheat the oven to 350°F.
  2. Line a rimmed baking sheet with parchment paper.
  3. Combine the cranberries, sugar, water, orange zest, and orange juice in a small saucepan.
  4. Bring the mixture to a simmer over medium heat and cook for 8 to 10 minutes, stirring occasionally, until most cranberries have burst and the mixture has thickened.
Bake and serve the brie
  1. Place the Brie on the prepared baking sheet and bake for 12 to 15 minutes, until the center feels soft when gently pressed and the wheel begins to slump.
  2. Spoon the cranberry topping over the warm Brie and serve immediately with the crackers.

Notes

For neat servings, spoon the topping over the Brie just before serving. Refrigerate leftovers for up to 3 days; freezing is not recommended. Use gluten-free crackers for a gluten-free option.
