Ingredients

  • 2 delicata squash medium, about 2 pounds total, washed
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Wash the delicata squash.
  4. Trim the ends off the squash and cut crosswise into 1/2-inch-thick rings.
  5. Scoop out the seeds from each ring with a spoon.
  6. Toss the squash rings with the olive oil, kosher salt, and black pepper in a large bowl.
  7. Arrange the rings in a single layer on the prepared baking sheet.
  8. Roast for 25 to 30 minutes, turning the rings halfway through, until tender and browned at the edges.

Notes

For even browning, arrange the squash rings in a single layer with space between them. Refrigerate leftovers for up to 4 days; freezing is not recommended because the squash can turn soft. Avocado oil can replace the olive oil for a more neutral flavor.
