Crispy Bacon Brussels Sprouts

Crispy bacon Brussels sprouts are roasted at 425°F until browned and tender, with crisp bacon adding savory flavor. Cooking the bacon first leaves the sprouts ready to roast cut-side down for golden edges.

Ingredients

  • 6 oz bacon thick-cut, cut into 1/2-inch pieces
  • 1.5 lb Brussels sprouts trimmed and halved
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet
  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F and set a rack in the center.
  2. Cook the bacon in a 12-inch skillet over medium heat for 8 to 10 minutes, stirring occasionally, until crisp.
  3. Transfer the bacon to a paper towel-lined plate.
  4. Toss the Brussels sprouts with the olive oil, kosher salt, and black pepper.
  5. Arrange the sprouts cut-side down in a single layer on a large rimmed baking sheet.
  6. Roast for 20 to 25 minutes, until the sprouts are browned and tender when pierced with a fork.
  7. Scatter the bacon over the sprouts and serve.

Notes

For the best browning, arrange the sprouts cut-side down in a single layer. Refrigerate leftovers for up to 4 days; freezing is not recommended because the sprouts can lose their texture. For a pork-free variation, use turkey bacon.
