  • 2 cup all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.5 tsp ground ginger
  • 0.5 tsp kosher salt
Wet Ingredients
  • 1 can (15 oz) pumpkin purée
  • 2 large eggs
  • 0.75 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 0.5 cup vegetable oil
  • 0.25 cup sour cream
  • 1 tsp vanilla extract
Optional Topping
  • 2 tbsp pumpkin seeds
  • 1 tbsp coarse sugar

Method
 

Prepare the Pan
  1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and line it with parchment paper, leaving an overhang for easy removal.
Mix the Dry Ingredients
  1. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground cloves, ground ginger, and kosher salt until evenly combined.
Mix the Wet Ingredients
  1. In another bowl, whisk together the pumpkin purée, large eggs, granulated sugar, light brown sugar, vegetable oil, sour cream, and vanilla extract until smooth.
Make the Batter
  1. Pour the wet ingredients into the dry ingredients. Fold gently with a spatula until no dry streaks remain, then transfer the batter to the prepared loaf pan and smooth the top.
Add Optional Topping
  1. Sprinkle pumpkin seeds and coarse sugar over the top if using.
Bake
  1. Bake at 350°F for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, loosely cover with foil during the last 15 minutes.
Cool and Serve
  1. Cool the bread in the pan for 15 minutes, then transfer to a wire rack and cool completely before slicing. Serve plain or with butter, cream cheese, or maple butter.

Notes

For a moist crumb, stop folding as soon as the batter is smooth—overmixing can make the loaf tough. Store tightly wrapped in the fridge up to 4 days (freeze up to 2 months). For a lighter option, swap the vegetable oil for an equal amount of melted unsalted butter or use full-fat Greek yogurt in place of sour cream for a tangier texture.
