Ingredients

  • 1.5 lb cremini mushrooms wiped clean and halved if large
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 3 cloves garlic minced
  • 0.33 cup Parmesan cheese finely grated
  • 1 tbsp fresh thyme leaves

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Place a rack in the center.
  3. On a rimmed 18x13-inch baking sheet, toss the mushrooms with the olive oil, kosher salt, and black pepper.
  4. Spread the mushrooms in a single layer.
  5. Roast for 15 minutes, then remove the pan from the oven.
  6. Stir in the garlic, Parmesan, and thyme.
  7. Roast for 5 to 7 minutes more, until the mushrooms are tender and browned and the garlic is fragrant.

Notes

For the best browning, spread the mushrooms in a single layer without crowding. Refrigerate leftovers for up to 4 days; freezing is not recommended because the mushrooms can become soft. For a dairy-free variation, replace the Parmesan with nutritional yeast.
