Prep and bake the cookie bars
- Heat the oven to 350°F and line a 9x13-inch pan with parchment, leaving an overhang on the long sides for lifting.
- Press the pumpkin purée between paper towels and blot until it feels dry to the touch, using this step to keep the bars chewy instead of cakey.
- In a large bowl, beat the softened vegan butter with the granulated and brown sugars for 2 minutes, until pale and fluffy.
- Beat in the blotted pumpkin and vanilla until smooth, scraping the bowl once.
- Add the all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg, then mix on low just until a soft, thick dough forms with no dry streaks.
- Press the dough evenly into the pan with lightly floured fingertips, flouring your hands as needed since the dough will be sticky.
- Bake for 22–26 minutes at 350°F, until the edges are lightly golden and the center springs back when pressed; a toothpick should come out with a few soft crumbs.
- Cool completely in the pan for about 1 hour, leaving it undisturbed so the bars set.
Make frosting and finish
- While the bars cool, beat the softened vegan butter and cold vegan cream cheese together for 1 minute.
- Add the powdered sugar, vanilla, cinnamon, and fine salt, then beat 2 minutes more until thick and smooth.
- Swirl the frosting over the cooled bars, scatter with fall sprinkles, and dust lightly with cinnamon.
- Chill for 20 minutes to set the frosting, then lift out by the parchment and cut into 24 bars.
