Ingredients

  • 2 tbsp unsalted butter
  • 1 yellow onion medium, thinly sliced
  • 1 red cabbage medium head (about 2.5 pounds), cored and thinly sliced
  • 1 cup apple cider
  • 0.25 cup apple cider vinegar
  • 2 tbsp light brown sugar packed
  • 1 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 6-quart Dutch oven

Method

  1. Melt the butter in a 6-quart Dutch oven over medium heat.
  2. Add the onion and cook, stirring often, for 5 minutes, until softened.
  3. Add the cabbage in handfuls, stirring as it wilts, and cook for 8 to 10 minutes, until all the cabbage is in the pot and beginning to soften.
  4. Stir in the apple cider, apple cider vinegar, brown sugar, salt, and pepper.
  5. Cover and cook over low heat for 45 to 60 minutes, stirring every 15 minutes, until the cabbage is tender.
  6. Remove the pot from the heat.
  7. Let the cabbage stand uncovered for 5 minutes before serving.

Notes

For tender cabbage with an even sweet-tangy flavor, stir every 15 minutes as it braises. Refrigerate leftovers for up to 4 days; freeze for up to 3 months. For a dairy-free version, use olive oil in place of the butter.
