Ingredients

For the garlic butter
  • 4 tbsp unsalted butter softened
  • 3 cloves garlic finely grated
  • 1 tbsp rosemary fresh, chopped
  • 1 tbsp thyme fresh leaves
  • 1 tbsp parsley fresh, chopped
For the roast
  • 3 lb beef tenderloin roast center-cut, trimmed and tied
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Equipment

  • 1 12-inch ovenproof skillet

Method

Make the garlic butter
  1. Stir the butter, garlic, rosemary, thyme, and parsley together in a small bowl.
Prepare and sear the roast
  1. Preheat the oven to 400°F.
  2. Pat the beef dry and season all over with the salt and pepper.
  3. Heat the olive oil in a 12-inch ovenproof skillet over medium-high heat, then sear the beef, turning to brown all sides, about 8 minutes total.
Roast and rest
  1. Spread the garlic butter over the top and sides of the roast.
  2. Place the skillet in the oven and roast until the thickest part reaches 145°F, about 25–35 minutes.
  3. Transfer the roast to a cutting board and rest for 15 minutes.
  4. Remove the twine and slice.

Notes

For the best texture, use a meat thermometer to check the thickest part of the roast. Refrigerate leftovers for 3–4 days; freezer-friendly for up to 3 months. For a dairy-free option, use dairy-free butter.
